Roast tomatoes and garlic at 400 degrees until softened, about 40 minutes. Sauté onion and herbs in butter and olive oil for about 10 minutes. Add tomato garlic mixture and broth. Remove herbs and blend the soup until smooth. Add salt and pepper to taste. Complement with roasted garlic toast!
