Sensory Evalution - Christopher Ranch Garlic vs. Chinese Garlic Testing Procedures

All peeled garlic cloves received a light mist of olive oil and a dash of sea salt and roasted in a 350-degree oven, uncovered for 30 minutes. For the Garlic Soup and the Garlic Broccoli, a "Total Eating Experience" was created, based on combining evaluations of Sharpness, Sweetness and Aroma. The results for the Garlic Bruschetta are only shown for Sharpness, the most important garlic characteristic for this recipe. All tests were performed by Chef Cary Neff.
